At 1,650 meters in San Gabriel, Tarrazú, Café La Cumbre’s Black Honey “Reposado” bursts with tangerine, strawberry, and apricot. Third-generation farmers Nancy and Minor Jiménez rest freshly picked Centroamericano cherries for 36–40 hours before depulping, leaving much of the sticky mucilage intact. As the coffee dries, those natural sugars caramelize into the seed, intensifying sweetness and body. With 90 years of history and 300 seasonal workers, this 100-hectare farm delivers one of Costa Rica’s most fruit-forward expressions of honey processing.
