Sidamo's Volcanic Highlands

Sidamo spreads across fertile highlands south of Lake Awasa, producing more coffee by volume than any other Ethiopian region. This breadth creates diversity—farms at varying elevations from 1,500 to 2,200 meters, microclimates ranging from cool and misty to warm and bright, and smallholder farmers working plots often smaller than five hectares.

Volcanic soil feeds roots with minerals that create Sidamo's signature jammy sweetness and fuller body. Fair Trade certification ensures stable farmer pricing. The Craft

Natural: Sun and Patience

Natural processing is coffee's oldest method—still widely used across Ethiopia because it requires minimal infrastructure and showcases fruit intensity. Whole cherries picked at peak ripeness spread in thin layers on raised beds or patios, drying under the sun for weeks. As moisture evaporates, fruit sugars slowly migrate into the bean, creating jammy sweetness and bold fruit character.

The challenge is consistency—too much moisture invites defects, uneven drying creates batch variation. But when done right, natural processing creates full-bodied coffee with intense fruit that stands out immediately.
