Wild islands produce wild coffee. From Flores—where Komodo dragons hunt and volcanic soil feeds ancient traditions—comes a naturally processed lot that captures the untamed character of Indonesia's most remote growing region.

Flores sits in the shadow of Mount Inerie, part of Indonesia's volcanic archipelago where the landscape shifts from rainforest to volcano within miles. The Bajawa region in Ngada District hosts 12 cooperatives representing 13,900 coffee-growing families who farm small plots under bamboo shade.
This isnt industrial agriculture. Farmers here work slopes so remote that Komodo dragons still roam nearby national parks. The volcanic soil runs rich with minerals, feeding Typica and S795 varieties that thrive in the island's distinct microclimate—cooler than lowland Indonesia, wetter than Sumatra, perfect for developing the sugars that natural processing will later concentrate.
ContextCoffee that protects dragons
The connection between Flores coffee and Komodo dragon conservation runs deeper than geography. Traditional coffee cultivation here relies on forest materials—tools, drying racks, shade trees. Under customary adat law, certain trees like jackfruit and kukung are sacred, protected from harvest. This respect preserves critical ecosystems that prevent soil erosion, protect riverbanks, and maintain habitats for prey species the endangered Komodo dragon depends on. Every bag supports this balance between agriculture and conservation.
The CraftNatural processing amplifies what's there
Natural processing is coffee at its most elemental. Ripe cherries get spread on raised beds and dried whole—no machinery stripping fruit, no water washing mucilage away. The beans ferment inside the cherry for weeks as sugars concentrate and fruit flavors seep inward.
In Flores, this method intensifies the earthy, chocolate character the volcanic soil already provides. The result: bigger body, deeper sweetness, and fruit notes you dont find in washed Indonesian coffees. This is Flores unfiltered.
Cedar Dark Chocolate Spice Brown Sugar Body Medium-Full Acidity Low The CupBold without being heavy
Cedar aromatics announce this coffee before the first sip—woody, aromatic, grounding. Dark chocolate dominates the palate with bittersweet depth, while warming spice notes add complexity in the mid-tones. Brown sugar sweetness rounds out the finish, balancing the earthy backbone. The medium-full body provides substance, and the low acidity keeps everything smooth and approachable. This is the kind of coffee that fills a room with aroma and delivers on the promise.
Find Your FixPour-over methods like V60 or Chemex at 1:16 ratio highlight the cedar and spice complexity. Drip brewing brings out the chocolate sweetness for an easy daily drinker. The syrupy body also makes this exceptional as espresso—pull shots at 1:2 ratio for concentrated cedar and dark chocolate intensity.
