In 2012 Mexico's coffee farms were devastated by leaf rust. Leaf rust is a fungus that takes all the vital nutrients from the coffee plant and causes the leaves to fall off and have little to no bean growth. Struggling to rebuild the coffee production, importers and farmers worked together to overhaul the coffee growing conditions. They succeeded in renewing over 5,000 hectares of farm land in Mexico by giving access to healthy seedlings, high-quality fertilizer, financing and purchase guarantees. Chiapas is a popular bean among coffee connoisseurs because of the traditional processing methods such as hand de-pulping, wooden-tank fermentation and patio sun-drying. This creates a consistently smooth cup of coffee with notes of vanilla, caramel and hazelnut.
