This Timor-Leste Aifu Ermera medium roast greets you with cocoa powder depth and dried cherry brightness, rounded by a savory-sweet pipe tobacco finish. The roast level softens sharper acids while keeping a clean fruit edge, making it equally at home in a morning pour-over or a careful Chemex. The texture is steady, coating the palate with a chocolatey weight.
The coffee comes from the highland village of Aifu in Ermera, where smallholder families grow heirloom Typica between 1,400 and 1,600 meters. Coffee is hand-picked and washed, then dried carefully on raised beds. Timor-Leste, the young Southeast Asian nation that gained independence in 2002, now relies on coffee for nearly 25% of its agricultural exports. Every bag supports farm communities working to rebuild their economy through specialty production.
