Yirgacheffe earned separate designation despite being geographically part of Sidama because cups from this narrow plateau taste distinctly different. The Gedeo Zone highlands where this coffee grows have been the benchmark for beauty and complexity in arabica for decades—Grade 1 Washed Yirgacheffe commands premium pricing for good reason.
Volcanic soil rich in minerals, abundant springs that give the region its name ("Land of Many Springs"), and elevations from 1,800 to 2,100 meters create ideal conditions. Cherries depulped within hours of harvest, beans fermented in clean water for 24 to 72 hours to remove all mucilage, then washed thoroughly and spread across raised beds to dry.
