Konga sits in the core of the Gedeo Zone—that narrow plateau section where Yirgacheffe coffee developed its legendary reputation. Single-farmer lots are common here, with producers like Takele farming 8-hectare plots that allow for meticulous quality control from tree to washing station.
The terroir defines the cup: volcanic soil rich in minerals, springs abundant enough to give the region its name, and elevations where thin air and cool temperatures extend cherry maturation. These conditions create the foundation for floral complexity that processing later reveals.
The CraftWashed: Yirgacheffe's Foundation
Cherries picked at peak ripeness arrive at washing stations fresh. Depulped within hours to remove fruit skin, beans ferment in clean water for one to three days—enough time to remove all mucilage, not long enough to develop fermented off-notes. Multiple rinses wash everything clean, then beans spread across raised beds to dry under highland sun.
