As a 2020 Cup of Excellence winner and the Director of Coffee at Pergamino, he’s shaped Colombia’s export scene from both sides of the cupping table. With Finca El Jardín, perched at 1,750 meters in Santa Bárbara, Antioquia, Henao returns to production—this time with one of the world’s most sought-after varietals: Gesha.

Brew Tips from the Roaster


We recommend a 1:16 ratio on a V60 or Kalita Wave. Use 203°F water, grind slightly finer than standard pour over, and bloom generously to capture the full aromatics. Total brew time: 3:00–3:30. Let it cool slightly before sipping—the florals get louder as the temperature drops.
