Mexico Chiapas Motozintla Microlot

In 1847, trees where brought from Guatemala and planted in the southern state of Chiapas. These particular trees come from the Motozintla region of Guatemala, known for its rich volcanic soil that provides a distinct taste profile. Motozintla is from the Tzotzil language meaning Squirrels Hill. The farmers in this region of Chiapas are involved in all the processes from plant to cup. Light rainfall during the growing season has forced the farmers into using nature to optimize their farming practices. One way they do so is by placing the beans on roofs to help with drying. A cup of this particular Chiapas microlot will have notes of sweet brown sugar and caramel to smooth chocolate and almond.
