The rarest of the rare
Peaberries are mutations where only one bean develops inside the coffee cherry instead of two. In Yemen, peaberries account for just 2-5% of total harvest, making this lot exceptionally scarce. The single bean receives all the cherry's nutrients, creating denser, more concentrated flavors.
Twenty-three producers in the Al-Haimah districts collaborated with Pearl of Tehama to create this lot. These western highlands parallel the Red Sea at extraordinarily high elevations—starting around 2,000 meters and stretching past 2,400 meters. Heirloom varietals descended from wild Ethiopian seeds brought centuries ago adapted to create flavors found nowhere else.
The Craft
Hand-sorted perfection
Pearl of Tehama, founded in the 1950s, now implements stringent hand-sorting and specialized storage to preserve quality. Farmers learned refined processing techniques while maintaining traditional methods: sun-drying cherries on raised beds for 15-25 days, with continuous monitoring for BRIX, moisture, and density.
It's labor-intensive but preserves five centuries of Yemeni coffee heritage. Coffee dries naturally on rooftops of stone houses perched on cliff edges—the same method used when coffee first traded in the 15th century.
