Architecture for extraction

Espresso demands structure. Single origins can shine pulled through nine bars of pressure, but they're rarely forgiving. Blends give us control—balancing sweetness, body, and complexity to create something consistent and versatile.
BCB follows classic espresso architecture. Brazilian coffee forms the base: naturally processed beans deliver chocolate notes and inherent sweetness that anchor the cup. Colombian coffee brings balance, its washed brightness adding caramel complexity without sharpness. Indonesian beans contribute what the other two cant: syrupy body and earthy depth that round out the profile and tame acidity.
Each origin is sourced, processed, and roasted to highlight what it does best. Then they're blended to work as one.
The Roast

City+ for sweetness and structure

City+ roast means medium-light development—just past first crack, stopping before oils emerge. At this level, caramelization builds sweetness without burning away origin character. You taste chocolate and caramel, not char.
For espresso, this roast level does two things: it preserves natural sugars that balance extraction bitterness, and it maintains enough structure to handle high-pressure brewing. Under-roasted and the shots run sour. Over-roasted and everything tastes the same. City+ walks the line.

Balanced and forgiving

Pulled as espresso, expect dark chocolate up front, caramel in the mid-palate, and a clean finish touched with cedar. The body is substantial but not heavy. Acidity stays low, making this approachable even for those who find bright coffees harsh.
In milk, the blend really shows its design. Chocolate and caramel cut through steamed dairy without disappearing. Whether you're making a cortado or a 16-ounce latte, the coffee holds its ground. This is what espresso blends are for: consistency, balance, and versatility across preparation methods.
Dialing In Start with 18-20g in, 36-40g out, 25-30 seconds at 200°F. If shots taste bitter, grind slightly coarser or reduce temperature. If sour, go finer or bump temp up 2 degrees. This blend is forgiving—it wont punish small mistakes in extraction.
